Fermentation: The coffee cherries are carefully hand-picked at their peak ripeness and immersed in water to undergo a “float” process, which removes lower-quality beans. This step brings out the coffee's natural sweetness and preps each cherry for a

carefully controlled fermentation. Brix degrees are measured first to ensure ideal sweetness. Then, the magic of fermentation begins: 18 hours in open tanks to enhance intense aromas, followed by a 24-hour aerobic stage after pulping. This meticulous approach results in a coffee with complex and vibrant flavors that captivate with every sip.

Drying: Dried in mechanical driers at a consistent temperature of 38°C, each coffee bean is carefully attended to for a precise drying period of 3 to 5 days. Then, it’s stored in climate-controlled warehouses between 18°C and 19°C, where every bean retains its unique characteristics and freshness, ready for the perfect moment to be enjoyed. This drying and storage process ensures a coffee with clean, enduring profiles and extraordinary aroma.
